Greek Salad
Greek salad is a staple in my summer salad roundup. Our homegrown summer tomatoes and cucumbers are still going strong, and there are ALL KINDS of dishes being enjoyed and shared in our home and with family or friends.
The ingredients:
Orange and yellow peppers
Cucumber (homegrown!)
Tomatoes (homegrown!)
Red (fresh) or white onions (marinated)
or green onions (chopped finely)
Feta (your favourite kind, or optional)
The so good it’s drinkable dressing:
1:2 proportion of olive oil : red wine vinegar
(I use about 1 Tbsp : 2 Tbsp wen drizzling)
Equal parts of:
Garlic Powder
Onion Powder
Dried Oregano
Dried Basil
Salt and Pepper
(I just sprinkle evenly over the veggies, about 1/2 tsp each, or to taste)
It never fails to make my lips smack!!!!
Lately, I’m eating toasted tomato sandwiches served open face
…which means MORE TOMATOES in my mouth!
I’m actually working on a hybrid sourdough / lightly yeasted sandwich loaf recipe… I’ll share it when I’ve perfected it.
